The Mahoneys became beekeepers in 2014, fulfilling Dan’s longtime dream. He had so many happy childhood memories of peddling his neighbor’s honey in a Red Flyer wagon and has always loved watching the bees’ activity, finding it as mesmerizing as watching a campfire.
Over the years, we acquired more hives, and miniaturist Angela, Dan’s Queen Bee, saw little Bavarian houses in the shape of the hives and began decorating them.
Over the years, we have integrated this hobby into our own family, leveraging the extra hands of our daughters during harvest. To extract our honey from the combs, we take it straight from the hives to our hand-cranked centrifuge. We filter it through a screening process to pick out large impurities, and then pour it straight into jars. The majority of our bees gather their pollen from the plentiful flowers around central Salem, a farm in East Salem and in Wilsonville at The Kitchen at Middleground Farms, where it is sometimes on the menu and always in their farmstand store.
